Zucchini Bread

Ingredients
• ¾ c. whole wheat flour
• ¾ c. unbleached white flour
• ¾ c. sugar
• ¼ tsp. baking powder
• ½ tsp. baking soda
• ¼ tsp. salt
• 1 ½ tsp. cinnamon
• 1 egg white
• 1 whole egg
• 6 T. canola oil
• 1 ¼ c. finely grated unpeeled zucchini
• 1 ½ tsp. vanilla

Directions
1. Grease 9 x 5 x 3 inch loaf pan. Preheat oven to 350°.
2. In a large bowl, combine dry ingredients (flours through cinnamon).
3. In a medium bowl, combine wet ingredients (eggs through
vanilla). Add to dry ingredients, stirring to combine well. Stir in nuts/raisins/chocolate chips, if using. (See tip below)
4. Pour into greased loaf pan. Bake for 50-60 minutes, until a toothpick comes out clean when inserted in center of loaf. Take out of oven and allow pan to rest for 10 minutes before taking bread out of pan. Cool before cutting.
