Turkey Meatloaf

• ½ cup breadcrumbs
• ¼ teaspoon ground black pepper
• ½ teaspoon chili powder
• ½ teaspoon dried thyme
• 1 small onion
• 1 carrot, grated
• 1 clove garlic
• ¼ red bell pepper
• 1 pound ground turkey
• 1 teaspoon salt
• 1 egg
glaze: catsup

Heat oven to 350
Chop onion, carrot, garlic, and red pepper very, small. Cook vegetables in a little oil until soft. Then put in a mixing bowl and combine with everything except the egg and meat. Make sure mixture is cool and then mix in the egg and meat, but don’t squeeze the meat. Make the mixture into a loaf onto an oiled pan or place in an oiled loaf pan. Bake for a total of 35-45 minutes. Brush ketchup onto the meatloaf after it has been cooking for about 15 minutes.
You can also make these into individual servings. Oil a muffin tin and fill with mixture. They should take about 20-25 minutes to cook through.
