When the summer months fade away and the chills of fall arrive, this warming chili will help you stay full and comfortable in the cold coming months!

  • Vegetable oil
  • 1 medium onion, chopped
  • 1 medium green or red pepper, chopped
  • 2 carrots, peeled and chopped
  • 3 garlic cloves, chopped
  • 1 pound ground turkey
  • 1 ½ tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 can pinto or kidney beans, drained
  • 1 can diced tomatoes in juice
  • 1 cup chicken broth

  1. STOVE – Coat the bottom of large pot with oil. Add onion, carrot, bell peppers, and garlic and cook over high heat until vegetables begin to soften, about 8 minutes. Add turkey. As turkey cooks, break up the large pieces. When cooked, mix in chili powder, cumin, and oregano and stir. Add beans, tomatoes, and broth. Bring chili to boil. Reduce heat and simmer uncovered until chili thickens, stirring occasionally, about 1 hour. Season with salt and pepper.
  2. CROCKPOT – Cook turkey in a skillet, break up into small pieces. Put turkey and all other ingredients into crockpot and cook on low for 8-10 hours. Season with salt and pepper
