Homemade Chicken Fingers

Baking homemade chicken fingers instead of ordering from a fast food restaurant saves you money, over 100 calories and 8 grams of fat! Make a large amount of these to store in the freezer for later use when time is limited. Just pop them in the microwave to make your own “fast food” on the go!


  • 1 pound chicken breasts
  • 2 cups cornflakes
  • 1 T flour
  • 1 tsp. salt & pepper
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • nonstick cooking spray


  1. Preheat oven to 375°. lightly oil cooking sheet with olive oil.
  2. Cut chicken breasts into strips about 1 inch thick, then put unsweetened cornflakes into a Ziploc bag and crush the cornflakes using a rolling pin or your hands.
  3. Combine crushed corn flakes, flour, salt, pepper, and grated cheese in a bowl.
  4. In another bowl, beat eggs with a tablespoon of water until well combined.
  5. Dip the chicken in the eggs, roll them in the crumbs (you may have to press down on the chicken to make sure they stick), then put them on a pan and spray the chicken pieces with cooking spray.
  6. Bake in the oven for about 10 minutes.
  7. You can serve with honey mustard, pizza sauce or another favorite dip.
  8. Enjoy!
