When we asked families to raise their hands if they liked eggplant, we heard crickets. But they were seriously converted once they tried these delicious eggplant pizzas. Try them yourself and you won't believe how good eggplant can taste.
coarse sea salt
sliced fresh tomatoes or halved cherry tomatoes
grated part skim mozzarella cheese
salt, pepper & dried oregano
Crush one garlic clove into a few tablespoons of olive oil and set aside
Cut eggplant into half inch slices; leave skin on (choose an eggplant that has a diameter of about 3 inches)
Lay slices on a rack and sprinkle both sides lightly with salt and let sit for ½ hour.
Preheat oven to 450.
With a paper towel wipe off moisture and extra salt. Place slices on an oiled baking sheet and turn over so both sides are oiled.
Bake for 15-20 minutes – flip over after 10 minutes so both sides can get brown. Remove from oven.
Switch the oven to broil
Brush some of garlic olive oil on top of each eggplant slice
Place tomato to cover eggplant and then add cheese and sprinkle with salt, pepper & oregano.
Place under the broiler for 3-5 minutes or until the cheese is melted.
