Chicken Burrito Bowl

This Chicken Burrito Bowl is a healthy option to the fast food burrito bowls that are all the craze!


  • 1 lb chicken breast
  • 1 cup cooked rice/roasted potatoes
  • 3 cups chopped lettuce
  • 1 cup tomato, diced
  • 1 cup roasted onion
  • 1 cup roasted peppers
  • 1 (15-ounce) any beans, drained and rinsed
  • 2 tablespoons chopped fresh cilantro leaves
  • 4 oz non-fat greek yogurt
  • 4 oz any cheese
  • 4 oz cilantro or parsley
  • 4 ea lime wedge


  1. Dice all vegetables (tomato, onion, pepper, lettuce, potatoes) to desired size.
  2. Roast or pan sear onions and peppers together. Remove and let cool.
  3. If using potatoes, roast at 350F until tender and let cool.
  4. If using rice, follow instructions.
  5. If beans are canned, clean beans.
  6. To assemble the bowls, divide rice mixture into serving bowls; top with lettuce, onions, peppers, beans, tomatoes, and chicken.
  7. Top with cilantro/parsley, lime wedge, non-fat greek yogurt and cheese.
  8. Enjoy!
