Cabbage & Caraway

This can be made with red or white cabbage and with olive oil or butter (or 1/2 and 1/2). You can even render a few slices of bacon until crisp, remove from the pan, and use the bacon fat to cook with. Sprinkle the bacon on before serving. This is a great side dish for pork; try it with our Garlic & Rosemary Roasted Pork Loin.


  • 2 T butter or olive oil
  • 1 onion sliced thin (1 cup)
  • 1 small head cabbage, sliced thin (3-4 cups)
  • 1 T caraway seeds
  • 2 T water
  • Salt and pepper, to taste


  1. Heat butter or oil in a saute pan, add onions and cook on low until soft and just beginning to brown.
  2. Sprinkle with caraway seeds and some salt and cook for 2 minutes.
  3. Add cabbage and water.
  4. Cover and simmer until cabbage is soft.
  5. Season with salt & pepper.
