(makes 4-6 cookies)
• 1 cup quick cooking oats
• 2 ½ TBSP white whole wheat flour
• 1 tsp baking powder
• 1 ½ TBSP brown sugar
• Pinch of cinnamon
• ½ cup applesauce
• 1 tsp vanilla extract
• 2 TBSP raisins
Combine the oats, flour, baking powder, brown sugar, and cinnamon if using. Stir in apple sauce and vanilla extract. Stir in raisins.
Spray a microwave safe plate with cooking spray.
Shape mixture into 4-6 cookies and place on microwave safe plate. Spread the cookies out so there is a lot of space between them. Microwave on High for 40 seconds. Rotate plate and microwave another 40 seconds. Let sit for 5 minutes and enjoy.
