Whole Wheat Pasta & Meatballs

• 3 tablespoons olive oil
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 28 ounce can tomato sauce
• 2 teaspoon each dried oregano & basil
• 1 teaspoon dried thyme
• ¼ teaspoon red pepper flakes (optional)
• Salt & pepper
• 1 large egg
• 2/3 cup breadcrumbs
• 1/4 cup parmesan cheese
• 1 pound ground turkey
• 1 pound whole wheat pasta

In a large pot, heat oil over medium-high heat. Add onion and cook until tender. Add garlic and cook, about 1 minute. Stir in tomatoes, oregano, basil and thyme. Season with salt and pepper (add red pepper flakes if you want). Bring to a boil. Turn heat down, simmer covered, for 20 minutes.

In a large bowl, mix together egg, 1 ½ teaspoons salt, and ¼ teaspoon pepper with a fork. Stir in breadcrumbs, cheese, Add turkey, mix until combined. Form into 1 -inch balls. Add meatballs to pot – make sure the sauce covers the meatballs. Put lid on the pot and simmer about 15-20 minutes.

While meatballs are cooking, bring a large pot of salted water to a boil. Add spaghetti, and follow the directions on the box. Drain spaghetti and then add to the meatballs & mix together.
